The spirit of the times is to invest in machinery, not people: big machines mass-producing a single item at a remote location. This may be well-suited to car production, but can be utterly inappropriate for food as well as for the environment. A pie might be blast-chilled and wrapped, cased and loaded on to a juggernaut, taken to a distribution centre and from there to a supermarket chilled store. Some days after production, it goes on sale.
Alternatively, it can be baked locally, put on sale within the hour, and if it doesn't sell on the same day it can be sent to a local soup kitchen. This is what Satterthwaites chooses to do because it gives YOU the best product. It costs you less, and it costs the environment less.
